Description

In this laboratory we research the internal structure and functionality of food ingredients and matrices at microscopic and molecular scale.

Its mission is to support reformulation, new product design and understanding of how industrial processes affect the structural and functional properties of food.

AZTI’s Instrumental Laboratory (Analytical Chemistry) infrastructure brings together expertise in food safety and quality within the food sector. It supports projects in sectors such as the agri-food industry. It integrates resources and equipment such as 6 GCs with detectors (including GC-MS), 4 HPLCs (including high-resolution LC-MS) and 1 preparative HPLC, atomic absorption spectrometry and a nutrient analyser, enabling operations under representative conditions. It offers services for the quantification of trace compounds, ingredient and contaminant profiling, and validated methods, with expert support in campaign design, data analysis and interpretation of results. Its key contribution is to generate traceable evidence and data to accelerate knowledge transfer to public authorities, clusters and businesses.

Equipment

  • 6 GCs with detectors (including GC-MS), 4 HPLCs (including high-resolution LC-MS) and 1 preparative HPLC
  • Atomic Absorption
  • Nutrient analyser
  • Spectrophotometers
Services
  • Evaluating the quality and functionality of ingredients in different formulations.
  • Predicting product behaviour during processing, storage and consumption (texture, stability, etc.).
  • Establishing relationships between microscopic structure and sensory attributes.
  • Structural designs focused on specific properties: lower fat content, higher digestibility, stability against processing factors.
